Head Chef Tom Brown, and his loyal team at Outlaw’s at The Capital Hotel are delighted to be just one of eight finalist in Essential Cuisine’s Britain’s Best Brigade. A special panel of judges whittled down all of the entrants across the UK to just one per region. It is now over to the public to decide on who they would like crowned Britain’s Best Brigade. Each of the finalists have filmed a short video explaining why they should win the title this year, and in Outlaw’s video Tom introduces you to some of his kitchen team.
Tom and his team work hard each day to showcase the best Seafood in London. Sourcing the majority of his seafood from Cornwall as well as other select markets up and down the UK, Tom works tirelessly to bring in the best, most sustainable seafood and highlight its quality with Nathan’s simple, yet unique approach to creating dishes. Having worked for Nathan in Cornwall as head chef prior to his move to London, Tom has first hand experience of Cornwall’s fish markets, and a thorough understanding of Nathan’s style of cookery.
Tom on making the final said, “I’ve got an amazing team around me, without them I’d be lost. We work hard and each share a daily goal of making sure every dish is right for our diners. We’ve got some fantastic characters that help lift the spirit when times are tough, and the kitchen is not short of some healthy banter, but ultimately, at our core we’re all grafters and keep an eye out for each other. The guys deserve the recognition, they’ve earned it. I’d love to see us go all the way!”
