For the past 30 years Rob Wing has pioneered the diversity of fresh, sustainably caught Cornish fish. Rob is a born and bred Cornishman who grew up in the fishing village of St Mawes, and has been involved in fishing all his working life; first as a seafood chef, then a fisherman, trawler owner and, since 1986, a fishmonger and merchant.
As one of our main fish suppliers, Rob Wing and the team communicate daily with our chefs to source high quality, fresh and sustainable seafood. Wing of St. Mawes operate closely with their local fishermen to remain aware of fish stock levels, sourcing and providing the finest fish and freshest seafood from local inshore boats wherever possible. Our chefs have worked with Wing of St. Mawes since 2012 in the knowledge that the best, freshest fish will be delivered to our restaurants the same day as it is landed.
